Summer might be coming to a close, but there’s still time to make the most of those last few seasonal veg and this beetroot scarpaccia is one of our favourite ways to do it!

We harvested fresh courgettes, potatoes, beetroot, onions and herbs during our visit to Vivo’s Nature HQ at Barley Wood, then turned them into this crispy-edged, seasonal Tuscan tart.

Eating with the seasons connects us to the land, and when produce is grown at the right time, it tastes even better!
