Ingredients
⢠1 large cucumber (approx. 350g)
⢠1 ripe avocado, diced
⢠200g (1½ cups) cooked edamame beans
⢠50g (ā cup) pickled red onions
⢠1 x 400g tin chickpeas, drained and rinsed (240g drained)
⢠10g (¼ cup) fresh mint, finely chopped
⢠10g (¼ cup) fresh parsley, finely chopped (or herbs of your choice)
⢠75g (ā cup) Peanut Rayu
