Recipe
Strawberry Base
• 300 g fresh strawberries
• 400 g water
• ~0.5 ml Pectinex Ultra SP-L (for thick juices)
(or your preferred pectin enzyme — just follow the brand’s dosage guidelines and adjust accordingly)
Infusion Blend (per 300 ml clarified strawberry juice + 300 ml vodka)
• 2.3 g Rhubarb root
• 1 g Dried echinacea flower
• 1 g Vanilla bean (split & seeded)
• 0.4 g Angelica root
• 0.4 g Ceylon cinnamon
• 0.4 g Liquorice root
• 0.3 g Cardamom seeds
• 0.2 g Gentian
• 0.1 g Wormwood
• 0.3 g Nutmeg
• 3 Cloves
Sweetening
Once infused and filtered, weigh your final yield. For every 450 g of infusion, add:
• 150 g White sugar
• 10 g Caramel
(Adjust proportionally based on your own yield — everyone’s filtration will vary.)

Method
1. Blend strawberries with vodka until smooth. Add pectin enzyme, blend again, and let sit ~45 min.
2. Strain through a double cheesecloth. First drops will be cloudy — repour until clear and let it filter completely.
3. Measure clarified juice, then mix equal parts juice and vodka. Add the spice/bittering blend.
4. Seal sous-vide at 65 °C for 2 hours. Chill in an ice bath, then filter through a Chemex for crystal clarity.
5. Sweeten according to yield, bottle, and enjoy your homemade Strawberry Amaro.
