Imperial Academy Heist has two steal-able TIE Fighters - one for the night approach and one for the day approach.
For the night approach, there's a branching path past the sensor array which has its own cutscene. If you shoot the pilot, you can land and steal the TIE.
For the day approach, after disabling the sensor array, you can fly over the canyon wall and find a TIE Fighter sitting next to a satellite array - shooting it with your ion cannon will cause it to land where you can steal it.
The night approach TIE Fighter is present during the day approach, but it can't be used in any way... or so I thought. By complete accident, I found that using the ion cannon on the TIE Fighter from the night approach causes the TIE Fighter from the day approach to act as if it was shot by an ion cannon and not the one from the night approach. Both are hooked up to the same script.
Unfortunately I don't see any possible way to do this the other way around as the day approach TIE is either not present in the night approach or flies away before you can get to it, as the Snowspeeder's lack of ion cannon means you can't fly over the canyon wall.
