Spring is beginning to emerge here, but I’m eager to hasten it along, so I’m launching a mini spring botanical series! In it, I’ll be recreating some of my favorite flowers using royal icing transfers and, at times, molded cookies. I’ve also recently become enamored with contoured royal icing transfers, so you’ll see me throughout this video trying to coerce ordinarily intractable royal icing into all sorts of curvy shapes, such as flower petals, leaves, and stems. We all need a healthy challenge every now and then, right?!
I hope to continue this series through the summer, but, before I get too far ahead of myself, let’s dive into these snowdrop cookies! As one of the first harbingers of spring, they’re a natural fit for this series kickoff!

COOKIE/ROYAL ICING TRANSFER SHAPES AND SIZES:
Torn cookie background: 3-3 ½” W x 4-5” L
Bulb: 7/8” W x 1” L, shaped in 1/2-teaspoon measure (7/8” wide at opening)
Outer petals: 1/4” W x 3/4” L, shaped over 1 3/16” to 1 1/4”-diameter tube
Inner petals: 1/4” W x 3/8” L, shaped over 1 5/8”-diameter tube
Leaves: 1/4-5/16” W x 2 1/2-3 ¾” L
Stems: 4-5” L, piped with #4 round tip with Wilton #101S tip for the small leaf extension at the top
(Note: The “stem-let” at the top of the floret is piped with a #5 round tip.)

Chefmaster Harvest Brown and Spectrum Flow Sky Blue for cookie edges; AmeriMist Electric Green for inner petal edges; AmeriMist Electric Green and a hint of Chefmaster Harvest Brown for all leaves and stems; Chefmaster Harvest Brown for bulbs
ROYAL ICING COLORINGS* AND CONSISTENCIES:
Ivory (Chefmaster): Dipping consistency for bulbs
White: Thick flooding consistency for petals and thick “glue” consistency for assembly
Medium Avocado (AmeriColor): Thick flooding consistency for petal edge; thick piping consistency for stem-lets and stems
Light Avocado (AmeriColor): Thick flooding consistency for leaves
*I use liqua-gel concentrated colorings to tint royal icing.
