Woo hoo! This week you’re in for double the fun - I’ve got a double feature! I start off with an in-depth edible sugar lace primer that shows how to mix the medium, spread it into silicone mats, and quick-set it in the oven to make both single-color and two-tone sugar lace. Once you’ve mastered those basics, we’re onto the second part (starting at 15:49): a how-to on making unique variegated flowers and leaves (great for cupcake toppers) using the two-tone lace created in part one!

NOTES ON SUGAR LACE MIXING AND SETTING:
All sugar lace mixing and setting instructions given in this video are particular to SugarVeil®, the original sugar lace! Other brands may very well require different methods, so please read the manufacturer’s instructions carefully before starting to mix your sugar lace.

Very important: SugarVeil® setting times vary widely with mats (depth of grooves), oven temperature, and, most of all, ambient humidity. As such, I rely more on tactile cues (rather than exact setting times) to determine when it is time to unmold the lace. The lace should be dry to the touch across the entire mat before you attempt to remove the lace. In my working conditions, I usually dry the lace for 1 or 2 minutes longer than SugarVeil® suggests for each mat, wipe it down with a damp cloth, and then unmold almost immediately, without allowing the 10 minutes cooling time that SugarVeil® suggests. But, again, these times may be different in your work environment.
