This Spinach Artichoke Dip is baked in the oven until golden brown on top and bubbling! This recipe is great for football, parties, and entertaining, and it's such an easy appetizer to make.

Oven Baked Spinach Artichoke Dip:
Ingredients:
1 lb fresh spinach leaves
2 tbsp olive oil
6 oz. jar marinated artichokes, drained and chopped
two 8 oz. blocks cream cheese
¼ cup mayonnaise
1 large clove garlic, minced or pressed
1 tsp crushed red pepper flakes
½ cup freshly grated parmesan cheese
salt
black pepper
Directions:
Preheat the oven to 400 degrees F.
In a large skillet set over medium high heat, add one tablespoon of olive oil and about half of the spinach leaves. Season with salt and pepper, then cook for a couple minutes until completely wilted. Remove from the pan, then add the other tablespoon of oil and the other half of spinach, season with salt and pepper, and wilt.
Let the spinach cool for a few minutes, then squeeze out all the excess liquid you can with your hands.
In a microwave safe bowl, microwave the cream cheese for one minute to soften. Add the spinach, artichoke, mayonnaise, garlic, red pepper flakes, parmesan cheese, a ½ tsp of salt, and several cracks of black pepper, and mix thoroughly to combine.
Portion the artichoke dip into a baking dish (or several mini baking dishes, if you prefer), and bake for about 25-30 minutes, until golden brown on top. Serve with toasted bread or tortilla chips. Enjoy!
