RECIPES:
Sourdough Garlic Braid (adapted from Artisan Sourdough Made Simple):
160 g (2/3 cup) whole milk
42 g (3T) butter
1 large egg
24 g (2 T) sugar
100 g (1/2 cup) sourdough starter
300 g (2 1/2 cups) all purpose flour
3 g 1/2 tsp) salt
Warm the milk and 2 T butter in a small sauce pan. Set aside to cool.
Combine the egg, sugar, and sourdough starter in the bowl of a stand mixer. With the mixer running, slowly add the milk mixture.Add the flour and salt and keep mixing until the dough comes together (about 1 minute). Cover with a damp towel and let rest 30 mins.
After the dough has rested, switch to the dough hook and knead for 6-8 minutes. The dough should be soft and pull away from the sides of the bowl (if it seems to sticky, sprinkle in a little more flour). Transfer the dough to a lightly greased bowl, and cover with saran wrap. Let sit at room temperature for 8 - 10 hours.
In the morning, remove the dough onto a lightly oiled surface and let rest for 5 mins. With a rolling pin, roll the dough into a large rectangle (about 15 x 10 inches). Spread 1/2 cup of butter, and sprinkle with desired fresh herbs and cheese.
Working with the short end of the dough, roll into a tight log. Place seam side down onto a lined baking sheet. Cover the dough with plastic wrap, and chill for 30 mins to 1 hour.
Using a large serrated knife, cut the dough in half lengthwise keeping 1/2" intact at the bottom. Crisscross the halves with the layered sections facing up. Continue until you have a complete twist. When you reach the end, tuck the end under.
Brush the surface with the remaining tablespoon of butter, and let rise for 1 hour (or until puffy).
Bake the dough at 400 for 20 mins. Reduce the heat to 350 and bake for an additional 10-15 mins. Enjoy πŸ₯°
