Rhubarb Nut Loaf
1 1/2 packed brown sugar
2/3 cup oil
1 egg
1 t soda
1 t vanilla
2 1/2 cup flour
1/2 cup chopped nuts
1 1/2 cups diced fresh rhubarb
Preheat oven to 325. grease and flour 2 loaf pans. Combine all ingredients in the order given. Pour into prepared pans.
Blend 1/2 cup of white sugar and 1/2 t cinnamon
Sprinkle over batter. Bake for about 60 minutes. When a toothpick poked in the center comes out clean it is done. Do not over bake. Chill before slicing. Should be refrigerated.
