Welcome back to Easy Freezer Meals/ Today we are making Spanish rice. This dish is so flavorful, easy, and reheats great as a freezer meal. In this video I will walk you though all the steps to making this awesome dish.

Recipe:
This recipe is adapted from the Mexican Rice Recipe found on Food.com

Makes 6-8 cups of Spanish rice (can be doubled)

12 ounces of canned diced or crushed tomatoes
1 medium onion (8oz)
3 medium jalapenos (or serrano or habanero for more kick)
2 cups of long grain white rice
1/3 cup of oil
4 minced garlic cloves minced
2 cups of Vegetable broth or chicken broth
1.5 teaspoon of salt
1/2 cup of cilantro or cilantro

Wash rice till water runs clear. Set to the side to drain and slightly dry off
In a blender process the tomatoes, onions, and peppers (you will need exactly 2 cups of this "Salsa" mix for your rice.
Heat oil on medium high heat and begin to fry rice. Once the rice has taken a golden brown color and looks slightly translucent reduce the heat to medium and add the garlic.
Cook for 2 minutes to release the oils and aromas.
Stir in the broth, 2 Cups of the "salsa" mix, and the salt. Give it a mix and bring it to a simmer.
Once it is simmering cover the pot and reduce the heat to the lowest setting. Cook for 13 minutes.

After 13 minutes remove from the heat, stir, add the cilantro and serve.

To freeze be sure to let it cool and store in freezer friendly containers.

To reheat you can bake it at 350F covered with foil for 30 minutes till warmed through.
