\Spanish Garlic And Bread Soup - Sopa De Ajo
Well, here we are trying something else with garlic. I am making a lot of dishes that contain garlic because at this time, all the flu and colds come upon you, and you will need more resistance to fight back.
As you know, garlic has the potential to help boost your immune system and thus helps your body get into a fighting stance against seasonal illnesses. Just remember that when you are cooking with garlic that you do not overcook it, for then it will lose all of its benefits, and it will be just a mushy, useless mashed potato with no flavor.
I particularly like this dish because of its flavor, and the garlic will not have an intense flavor for the bread will absorb it and thus give it a mild taste. It will not be overpowering for the amount of garlic added.
Now try it another way, by adding some strong spice to it like chili or cayenne pepper, and see how that goes. Let me know how yours turned out.
Ingredients:
5 to 6 cups - Cubed rye bread
1/4 cup - Extra virgin olive oil, some to drizzle on bread cubes
6-8 - Thinly sliced garlic cloves
1/2 cup - Ham diced or sliced
1-2 tsp. - Sweet paprika or to taste
1 cube - Chicken broth
1 med. - Onion chopped
2-4 - Large eggs
1/4 cup - Chopped parsley
5 -6 cups - Water
Salt and pepper to taste
Options
Cayenne pepper to taste
Chilli pepper to taste
