Sourdough Diaries: Part 2 - introducing…Doris!
Guys?! GUYS?! I think it’s actually working. She smells sour. She is bubbly. She seems happy. I’m stupidly optimistic for someone stumbling her way in the dark! Tips I have acquired:
1) Weigh your jar first - makes it easier when calculating how much discard to remove each day (you just do the weight of your jar + 50g and keep that).
2) Keep in the microwave wrapped in a towel while it’s cold. This provides enough warmth and humidity for bacteria to grow, but just don’t bloody turn it on.
3) I use the 1:1:1 method - so every day I am removing enough discard to leave me with 50g of starter, and to that I’m adding 50g bread flour and 50g water.
4) Patience is key - by day 10-14 we should see some action.
