It's just knowing your students.
This student sat in the back of my classroom, and we all called him "Pop Pop" because he acted like an old man. I learned that one of the quickest ways to make him smile was to gently mess with him. I'd tease him, joke with him, and pretend to bother him just enough to get that grin.
That wouldn't work for every student.
But it worked for him because our relationship came first.
