I never thought I’d appreciate simplicity in flavors
Moving to Spain helped me in that
Growing up in the US, everything was always done to the extreme— loud flavor combos, bright colors, and displays that were a mile high.
In Madrid though, you can have impressive displays but looking at the actual contents of traditional Spanish meals you see the simplicity.
Bread, tomato, olive oil ~ pan con tomate
Eggs, olive oil, potato ~ tortilla de patatas
Tomato, cucumber, pepper, onion ~ gazpacho
I love it, I never thought I’d be contemplating if I want an onion in my omelette and considering it to be a big choice!
