I collect the star Snowman's Big Head in Snowman's Land without using any buttons (I only use the joystick and adjust the camera angle).
Here are the specifics of what I do. I first moved a moneybag all the way over to the shell's item block, duplicated the moneybag excessively, and then rode over to the shell by repeatedly bouncing on the moneybags. From there, I use the shell to gain hyper speed in order to reenter fly guy's zone exactly in front of him, causing him to lunge forwards. I then move far away enough from fly guy to deactivate him. Note that in order to manipulate fly guy, he needs to be deactivated 2000+ units away from his starting point, so to accomplish this, it was necessary to have him lunge away and then quickly deactivate him before he turned back. From there, I repeatedly manipulate fly guy to transport him closer to the snowman. Then I climb the snowman, reactivate fly guy, and bounce on him as he flies by. The twirl from bouncing on him provided Mario with enough height to get onto the snowman's head to collect the star.

I collect the star The Big House in the Sky in Rainbow Ride using 1 A press. The A press is to jump over the 4th glass block that lies on the carpets path.
This video is an improvement from my previous video in which I collected this star in 3 A presses. You can find that video here: http://youtu.be/75SMmnsTxlM. Since then, I was informed by Tyler Kehne of a glitch in which Mario is able to retain his vertical speed. You see, when Mario does a dive recover and lands, the variable that maintains his vertical speed does NOT reset to zero. So, if Mario lands while he is falling, then this vertical speed will be negative. But if Mario lands while he is still ascending, then this vertical speed will be positive. This vertical speed WILL reset to 0 if Mario moves at all, but punching and breakdancing will not affect it. Anyway, once Mario becomes airborne, then his vertical speed takes instant effect. So by storing a positive vertical speed and not resetting it, I am able to have Mario pop up when he falls off the carpet, effectively bypassing the 2nd and 3rd glass blocks that lie on the carpets path.

I collect the star Top O the Town in Wet-Dry World using 0 A presses. Unfortunately, this route requires the water level to be high, and so this wouldnt actually save an A press in the 120 star run, since it takes an A press to enter the painting at that height. The reason I need the high water level is for the trick to glitch my way back to the main area from the town. You see, when you go through the loading point and transition from standing to being in water, Mario instantly rises to the top of the water. On the high water level, this means appearing in the main area. But on the low/medium water levels, the top of the water is out of bounds, and so Mario just stays in the pipe.
This is a very complicated route, so Ill do my best to explain it. First, I grab chuckya to place the HOLP near the wooden plank. Then, I go to town. As I go through the loading point, I loop back around to raise the water level a bit. When I make it to town, I ascend onto the cork boxes using a misalignment. I then perform the hat in hand glitch using the metal cap, using the water to keep the metal cap from falling off the boxes. I then make my way back to the main area. To do this, I lower the water level so much that the pipe becomes mostly dry, and Im able to stand on the floor of the pipe. Interestingly, when Mario loads the main area while standing at the bottom of the pipe, he instantly ascends to the surface of the water (but only if the water is at its highest level). After Im back in the main area, I release chuckya at the HOLP using object displacement, and get him safely onto the plank. I then use the teleport to undo the hat in hand glitch, and make my way back to chuckya. This time, chuckya helps me back onto the plank. I then open the star block, transport chuckya to the star, and have him throw me into it.
To raise/lower the water, I make use of a glitch, which works as follows. The water in the town raises and lowers periodically. Whatever water level you unload the town on becomes the median water level for the next time you load the town. So if you consistently unload the town while the water is at the top/bottom of its cycle, then the water will gradually rise/lower over time.
In order to get chuckya onto the plank, I make use of the object displacement glitch. You see, when Mario has his hat in his hand, objects he releases dont appear in front of him, but instead appear at a point known as the HOLP. The HOLP represents the last place Mario held an object without the hat in hand glitch. Anyway, normally when I throw chuckya, I cant catch up to him fast enough to reach him before the peak of his trajectory. However, using the hat in hand glitch, I can throw chuckya into myself, thereby allowing him to make it onto the plank safely. I collect the star Pole-Jumping for Red Coins in Dire, Dire Docks using 2.5 A presses. The A presses are as follows:
A Press #1: to swim to the shell, to swim with the shell to clone a pole, to swim with that pole clone to land
A Press #2: to jump from one pole to another pole, to swim to the shell, to swim with the shell to clone a pole, to swim with that pole clone to a desired spot in the water
A Press #3: to jump off of the pole clone onto the platforms above, to swim to the shell, to swim with the shell to clone the red coin star
This video is an improvement from my previous video in which I collected this star in 3.5 A presses. You can find that video here: http://youtu.be/3OB6migRW2g. Since then (in part thanks to Gaehne D.), I discovered that I didnt need to jump off of the first pole clone. With insanely precise positioning, Mario is actually able to release the pole clone such that he can let go of the pole and land on the boxes above. Here is a screenshot of the positioning: http://imgur.com/QVDCXHF. Note that Mario must be at an angle like so, since he holds objects slightly to his right. With this angle, he holds the pole directly downhill from himself, thereby maximizing the height of the pole.
Because I cloned this star, I show a little bit extra at the end just so its clear that I collected the right star.
If youre wondering about the half A press, read this before commenting to ask why. I use a special notation that allows for half A presses. Specifically, if you enter a level already holding the A button, then that A press only counts as half. Its actually pretty important to distinguish between the A button being PRESSED and the A button being HELD. While pressing A allows Mario to execute several kinds of jumps, the holding of A allows Mario to swim in water, do little kicks up slopes, grab the owl, and twirl slowly. So if a star requires the A button to be held, the pressing of the A button could have been done at some point in the past, and just held until that moment. For instance, lets say there are two stars: one that requires the A button to be pressed (x1 A presses), and another that only requires the A button to be held (0.5 A presses). Individually, these stars would both require a full A press. But if these stars were collected one after the other, then the A button could be pressed during the former, and held all the way through to the next star to be used in the latter. In this manner, these stars together would only use 1 A press, whereas they would take 2 A presses if done individually. So during a 120 star run, you would round these half A presses down, but on a star-by-star basis you would round them up.
