I've always wanted to try this after seeing the movie with the kids years ago. This slow cooker version is super-simple.

Ingredients:
2 large potatoes
1 sweet potato
2 red bell peppers
2 red onions
2 zucchini
1 eggplant
1 carrot
2 24 oz jars of your favorite spaghetti sauce
5 cloves garlic, minced
2 teaspoon each of thyme, herbs de provence, oregano, salt, and pepper
grated parmesan cheese for a topping

Directions:
1. Slice all but the zucchini and eggplant into 1/8" slices. Slice the zucchini and eggplant into 1/2" slices.
2. Coat bottom of slowcooker with sauce and beginning layering in the veggies. If you alternate it makes it look really nice and the flavors will complement each other.
3. After completing a layer, season with spices, salt and pepper, and some of the minced garlic. Add a thin layer of sauce on top and beginning layering the rest of the vegetables. Finish by topping it with the rest of the garlic, spices, and sauce.
4. Cook on high 4 hours or on low 6 hours.

Serve over rice or mashed potatoes and top with grated parmesan cheese.
