The secret to recreating that iconic restaurant fajita sizzle is simpler than you think.
In the 90s, sizzling fajitas were the most dramatic thing happening in any dining room. The whole restaurant would stop. Heads would turn. That sound and that smell announced something special was coming. The problem is restaurant fajitas almost never taste as good as they look and sound.
In this video I'm fixing that. Skirt steak dry rubbed one to two days in advance for maximum crust and flavor, peppers and onions cooked hot with real char, tortillas toasted directly on an open flame, and the secret sizzle sauce that creates that iconic sound and smell right at your table at home.
