Recipe:
A Pumpkin
1/2 Leek
Water
1/4 - 1/2 cup Half n Half
1 - 2 Tbsp Honey or Brown Sugar
1 - 2 Tsp Grated Ginger
2 Tbsp Butter
Olive Oil
Salt
Pepper
Quarter your Pumpkin. Brush with Butter, Salt and Pepper. Bake @ 400 Degrees for 1Hr. Chop the Leek and sweat for 5 minutes in Olive oil. Scrape the Pumpkin Flesh from the skin and add to the pot. Add just enough water to barely cover. Simmer for 45 minutes. Blend. Add Ginger, Sugar, and Half n' Half. Stir and adjust seasoning to your preference. Serve.
