Our take on Taco Tuesday: Chicken Quesadilla Cones 🌮
What you need👇
25 8in flour tortillas, cut in half
15oz can black beans, rinsed
14.5oz can southwest corn
1 bunch cilantro, chopped
1 bunch green onions, sliced
6 cups mozzarella cheese
2 cups Colby jack cheese
1lb pulled or chopped cooked chicken
2tsp Pit Boss GSP Rub
1/2tsp cumin
1Tbsp chili powder
How to make them👇
In a mixing bowl, combine all items expect for the tortillas. (Mixing the black beans in last will prevent them from being smashed or broken apart)
Roll each half tortilla into a cone shape, securing each cone with a toothpick so the cone holds its form.
Once the cones are formed, lightly stuff each cone with the chicken and cheese filling.
Preheat Pit Boss Grill to 300 degrees.
Using the upper racks of your grill, evenly space the cones vertically in the grill grates.
Allow the cones to toast for 15-20 minutes, or until the shell is crisp to your liking.
Remove from the grill and serve immediately.
Optional garnishes: salsa, guacamole, or ranch
