Shallots have a mild onion flavor with a touch of garlic. Youll find shallots, a member of the onion family, in all sorts of recipes. Chef Anthony Bourdain, in his book Kitchen Confidential, said that shallots are one of the things that make restaurant food taste different from your food.
Shallots are small and often grow in clusters. They have a copper color papery skin and are most commonly seen with a pinkish hue. Shop for shallots that are firm and dry without any signs of sprouting. Store whole shallots as you would onions not in the refrigerator.
