Alternate liveries for the cars can be accessed by holding down the 'VR1' and 'Start' button at the car selection screen before making your choice with the gas pedal.

Highlight the Nismo R33, and hold START, LEFT, BRAKE, and VR BUTTONS 1+3, then hit ACCELERATE.
Porsche 917K
This car can be unlocked using the same procedure to unlock Sonic, but this time, hold down the V.R. 1+2 buttons instead of V.R. 1+3.
