~Salted Egg Cashew Nuts~

Cashew cashew cashew nuts! Good things must repeat 3x 😂

This sinful snack is perfect for festive munching, whether for own consumption or gifting. There were plenty of leftover egg whites from my pineapple tarts, so this recipe is just nice to reduce waste.

*Ingredients*
1kg cashew nuts
300g corn flakes
130g egg whites (liquid)
120g salted egg powder
200g sugar (I used cane sugar)
20g mushroom powder
10g salt
10g chili powder
40g dried chilies
40g curry leaves

Method
➡️ pre-bake nuts at 150C fan mode 30mins, stir in between
➡️ add ingredients except nuts, dried chilies and curry leaves
➡️ mix to paste form, then add nuts and mix well
➡️ bake at 140C fan mode 40min, stir in between
➡️ add dried chilies and curry leaves
➡️ bake at 140C fan mode another 10-15mins or until it is crunchy
