Red Velvet Whoopie Pies/Sandwich Cookies made with a box cake mix
These turned out very tasty but a couple of things that I found while making them. The 2oz scoop made a very large cookie, my co-workers thought it was fine but that would be up to you. Second I feel that it needed more liquid and less cooking time to be more of a whoopie pie. Mine turned out more like a sandwich cookie. So I started over and they are so good both ways. I am going to give the directions to make it like a cookie and also a whoopie pie.
Ingredients:
Whoopie Pie
1 or 2 red velvet cake mixes depending on how many you need. (6 large or 12 12 smaller)
2 eggs
1/4 cup vegetable oil
2 tablespoons of milk more if needed.
Cookie
1 or 2 red velvet cake mixes depending on how many you need.(6 large or 12 small)
2 eggs
1/4 cup vegetable oil
Filling:
1 package of softened cream cheese
1 stick of softened butter
1 package of vanilla pudding.
1/4 cup milk
2 oz. ice cream scoop or 1 oz. cookie scoop
Decorator bag and wilton 2D tip or similar
Heat oven to 350*
For the whoopie pie or the cookie mix all ingredients and scoop the mixture with an ice cream scoop or cookie scoop on a cookie sheet lined with parchment or a Silpat.
Cook for 10-12 minutes for whoopie pies.
12-15 minutes for cookies.
While the whoopie pies or cookies are cooling mix all filling ingredients together until smooth and creamy. Fill a bag with cream and sprinkle powder sugar over the top. Keep in a tightly covered container in the refrigerator.
