The most labor intensive part is prepping the squash. The rest is easy peasy and absolutely DELISH π
Recipe below ππ½
Ingredients
π§‘ 4-4 1/2 lbs of red kuri squash
π§‘ 2 T butter
π§‘ 4 small shallots
π§‘ 4 cloves garlic
π§‘ 2 T tomato paste
π§‘ 1 T grated ginger (from 3-inch piece)
π§‘ 1 tsp curry powder
π§‘ 1 dried red chili
π§‘ 1 can 13.5 oz coconut milk
π§‘ 4 cups chicken broth
π§‘ 1 1/2 tsp salt
π§‘ 1 lime juice (about 2 T)
Optional: unsweetened shredded coconut &/or sliced shallots for topping
1οΈβ£ Heat oven to 400. Insert quartered squash. Bake for 1 hour. Let cool.
2οΈβ£ Peel off skin for ~3 cups squash
3οΈβ£ Melt butter in Dutch oven.
4οΈβ£ Fry garlic, shallots, & ginger for 1 minute. Add tomato paste & fry for another minute.
5οΈβ£ Turn heat down & fry lightly another 5 min.
6οΈβ£ Add curry powder & red chili & cook 1 min.
7οΈβ£ Add squash. Turn the heat up, stir occasionally, & cook for 5 min.
8οΈβ£ Add coconut milk and broth.
9οΈβ£ Once it simmers, lower heat & cover. Simmer for 30 minutes.
π Turn off the heat. Blend. Add salt to taste. Serve with garnishes like shredded coconut & lime & scallions, if you like.
This looks like a LOT but itβs worth the effort. ππΌ Just ask my family. π
