Crunchy Dill Pickles Recipe:
Yield: 7 quarts
Ingredients:
About 12-13 lbs. 3-4 inch pickling cucumbers, kept whole if small or sliced as desired
Cold Water and Salt Soak
2.5 gallons ice-cold water
2 cups salt
Pickle Brine
9 cups water
7 cups white distilled vinegar (5%)
¼ cup sugar (optional)
9 tablespoons canning or pickling salt
2 tablespoons pickling spice
14 large dill sprigs (2 large sprigs per jar)
14 teaspoons mustard seeds (2 teaspoons per jar)
7 large garlic cloves, cut in half (2 halves per jar)
1 ¾ teaspoon red pepper flakes (¼ teaspoon per jar)
Equipment:
7 clean quart jars
7 lids and bands
21-22 quart water bath canner
5 gallon bucket or large cooler
Large stock pot
whisk
Ladle
Bubble remover tool
Jar grabber tool
Instant-read thermometer
