Day 11 of 14 Days of Love Behind the Recipes is potato leek soup. When my husband and I got married, he told me how much he loved this soup from his time living in Europe. At the time, I had never even been past the western side of the U.S. and I had definitely never cooked with leeks. But I dove right in, learned how to work with this new-to-me ingredient, and came up with this cozy, comforting version of the soup he loved so much. It’s simple, rich, and now a regular part of our dinner table thanks to that little love story behind it.
