In southern UK, summers are hardly hot enough to fully dry the corn on plants. I find it dries nicely in the house. And quite quickly as long as the sheath is yellow as you see here.

This was sown late April and transplanted around 20th May after any risk of frost
They are spaced very close, at cm 25/10 inches. No dig with compost mulch and no fertilizer used
