Recreating one of Mom's early dishes. I think I'm going to start working my way through the best ones! This one was truly delicious--I had two slices last night for dinner! This freezes well to reheat and enjoy later.
Ingredients:
1 unbaked 9" pie shell
1 9 oz pack of frozen, chopped spinach, cooked and drained according to directions
1 10 oz can condensed cream of mushroom soup
1 cup shredded cheddar cheese
1/4 cup parmesan cheese, grated
1 tablespoon onion powder
4 large eggs, lightly beaten

Directions:
1. Make sure you remove as much water as possible from the spinach. I pressed mine in a colander using a plate.
2. In a large bowl, add the soup to the beaten eggs and whisk until mixed. Add the parmesan cheese and onion powder and whisk until well mixed.
3. Add spinach and cheddar cheese and mix until all ingredients are mixed together well. Pour this into your pie crust, leaving room for the mix to expand as it cooks.
4. Bake pie at 350 degrees F for 50 minutes or until toothpick pulls out clean. Take out the pie and let it cool.
