I needed something easy to make and tasty. Mom's Date Bread didn't disappoint! Dennis, Elaine, Gubby, and the boys, sure liked it!
Ingredients:
1 1/4 cup sugar
1/2 cup unsalted butter, softened
1 1/2 cups dates, pitted (about 20)
1 teaspoon salt
1/4 teaspoon cinnamon
1/4 teaspoon ground ginger
1/8 teaspoon nutmeg
1 teaspoon vanilla extract
2 eggs
2 1/2 cups all purpose flour (sifted)
1 teaspoon baking soda
1/2 cup buttermilk

Directions:
1. Preheat oven to 350F.
2. Soak dates in 1/2 cup water for 20 minutes. Microwave on high for 1 minute, then chop up in a food processor (or mash up with a fork or potato masher). Let cool.
3. Add dates to a mixer and add butter and spices and sugar while mixing. Add vanilla extract and eggs (ensure mix is cool first).
4. In a separate bowl, sift together the flour, baking soda, and salt.
5. Alternate adding 1/3 of the flour mixture and 1/3 of the buttermilk while stirring into the date mixture. Do not overwork the flour---just enough to mix in the flour and buttermilk.
6. Pour into a greased bread pan or small casserole dish and spread evenly. Bake at 350 for 1 hour or until an inserted toothpick pulls out clean.

Cool before cutting.
