My husband loves carrot cake. With Easter just around the corner, it’s the perfect time for carrot cake! But let’s make carrot cupcakes for some Easter potluck and family gatherings!

I found these super cute Easter bunny buns chocolate molds. So I figured I would use up more of my holiday chocolate candy melts and make carrot cake pops in the shape of Easter bunny buns for Easter!

Easter, bunny, carrots, sweets, cupcakes, cake pops, what more could you want?? I also showed three other ways you can decorate your moist carrot cupcakes if you want to forego the carrot cake pops. Some sprinkles, Cadbury mini eggs or even just some cake crumbs will give your moist carrot cupcakes the extra touch for your Easter party!
