These cookies are so cute, colorful, and delicious!
Makes around ~35 cookies
Ingredients:
- 3 cups of flour
- 3/4 tsp of baking powder
- 1/4 tsp of salt
- 1 egg
- 1 cup of sugar
- 1 cup of softened unsalted butter
- 1 tsp of vanilla extract
- 1 tsp of peppermint extract
- red food coloring
- 1/2 cup of crushed peppermint candies/candy canes
Directions:
1. Whisk flour, baking powder, and salt together in a medium sized bowl. Set aside.
2. Beat butter on high for 1-2 minutes, then add sugar. Make sure to scrape the sides so that no butter or sugar is clumped on the sides of the bowl.
3. Mix in the egg and vanilla extract.
4. Add half of your dry ingredients, and mix well. Add the rest of your dry ingredients and knead at a low speed.
5. Divide the dough in half. To one of the halves, add your crushed peppermint candies, peppermint extract, and red food coloring until the coloring is equally distributed throughout the dough.
6. Wrap both mounds of dough in plastic wrap, and refrigerate for 1 hour.
7. Roll out both of your dough mounds into 14x8 inch rectangles. Place the red dough on top of the plain dough and roll it into a log.
8. Cover dough log in parchment paper and refrigerate for at least 1 hour.
9. Slice the dough log into 1/4 inch thick slices, and bake on a parchment or silicone lined baking pan at 375 degrees Fahrenheit for 12-14 minutes, or until very pale golden brown on the edges.
10. Cool for about 10 minutes and enjoy! :D
