Cupcake Recipe
Makes around 12 cupcakes
Ingredients:
- 1 cup of all purpose flour
- 1 1/2 tsp of baking powder
- 1/4 tsp of baking soda
- 1/2 tsp of salt
- 1/2 cup + 2 Tbsp of granulated sugar
- 1/2 cup (1 stick) of softened, unsalted butter
- 2 eggs
- 1/2 tsp vanilla extract
- 2 Tbsp of milk

Pineapple Puree Ingredients:
- 2 cups of fresh pineapple

Pineapple Curd Ingredients:
- 1 cup of pineapple puree
- 1/3 cup of sugar
- 2 Tbsp of corn starch
- a pinch of salt
- 3 egg yolks

Pineapple Buttercream Frosting:
- 1/2 cup (1 stick) of softened, unsalted butter
- 1 1/2 cups of powdered sugar
- leftover pineapple puree ( around 1/3 cup )
