This recipe is based on our basic 70% hydration sourdough loaf which we made in this video: youtu.be/YfWcs2k7oQ4

In this video, we add our house cured pancetta and some fresh chopped parsley to make "Pancetta-Parsley Bread." This bread is great to snack on as is, yet the possiblities are endless. Serve with fresh sliced tomatoes and basil, as toast with some over easy eggs, or to make a spectacular grilled cheese sandwich (I recommend using emental or fontina).
