IMPORTANT INGREDIENT NOTE: that I particularly like the Anthony's brand of Vital Wheat Gluten. I find it has less of the gluten-y aroma compared to Bob's Red Mill. Also, Anthony's Oat Fiber has zero net carbs but other brands may have more. Please keep this in mind when sourcing ingredients.
MORE EXPENSIVE? Some people have inquired to the cost and based on the cost of ingredients in Canadian Dollars for me, each batch cost me $5.66, working out to 71 cents per naan. For me, this is about the same or a little more than the cost of regular store-bought naan (though who likes store-bought naan anyway??). It's WAY cheaper than take-out naan.

The keto diet helps the body get into ketosis (the state in which the body primarily is burning fat for fuel) and stay in that state with the minimization of net carbs. This bread can easily be a part of a balanced keto diet with its super low carb count.
Recently (March 2023), I checked the effect of this bread on my blood glucose with a CGM. It did not raise my blood sugar at all. The line stayed flat as if I was still in a fasted state.
I think the confusion is when some "gurus" on YouTube claim that their grain-free/lectin-free/legume-free/plant-free way is the only way to do keto right. Only YOU can tell what helps put your body in ketosis in a healthy way. NOT these strangers!

CAN I SKIP THE FLAX? You can substitute it with chia seeds. Measure out the same amount and grind it finely. Then sift and use that. It tastes pretty good but a little drier than using flax. Also, the color will be less golden and more brown.

Yes, Mary's Test Kitchen is finally revisiting the classic Lupini Bean, with a twist! After all the comments from last time, I was convinced I needed to track down the less toxic version of Lupini Beans: SWEET Lupini Beans.

Both direct comments AND online recipe blogs from my searches have said that you can simply cook sweet lupini beans like you would regular beans and they would be ready to eat; no extra soaking.
However, the online REVIEWS of sweet lupini beans tell a different story.

Hi friends, This method is essentially using a hot marinade; simple but a few things for success:
TYPE OF TOFU You can use any water-packed tofu that is firm enough to hold up to a boil (medium, firm, xtra firm) I don't recommend silken tofu as its structure doesn't allow flavor to infuse in the same way, plus it will be too delicate to hold up to boiling.
AMOUNT OF TOFU & STORAGE I used two 500g blocks of organic firm tofu in this video. However, you can make as much or as little as you like. It literally doesn't matter.
GENTLE SIMMER vs ROLLING BOIL The more rapid the boil, the greater chance of your tofu breaking down. However, a more rapid boil infuses the flavor faster! For softer tofu, you may need a more gentle simmer. And on the other hand, a firmer tofu can withstand a more violent boil :-) Use your discretion!
FLAVORS I used about 1 tablespoon of salt, 2 tablespoons of apple cider vinegar, and 1 tablespoon of mushroom seasoning in this video. However, EXACT AMOUNTS ARE NOT IMPORTANT. What's important is that the broth tastes good in a PUNCH YOU IN THE TASTEBUDS-kinda way.
You can add other seasonings but keep the broth THIN so it can penetrate the tofu curds easily.
MUSHROOM SEASONING Mushrooms Seasoning is an extract of mushrooms which adds savory flavor. NOT to be confused with dried mushroom powder, it doesn't taste particularly mushroom-y. Buy it at East Asian grocery stores (for the best price) or online (those prices can get out of hand though so...I don't usually recommend).
LEFTOVER VEGGIES & BROTH This recipe can be zero waste! Blend the strained veggies to add thickness, flavor and fiber to your next soup or stew. You can also use the extra strong broth as a base for soups or use to replace some of the water when you cook grains and beans.

Hi friends, In my haste to make a shorter video, I left out a couple important notes! Please read before making this 'recipe'!

If you have vacuum-packed extra firm or pressed tofu, it may take a much longer time to get the flavor all the way through. I don't recommend silken tofu as its structure doesn't allow flavor to infuse in the same way, plus it will be too delicate to hold up to boiling.
AMOUNT OF TOFU & STORAGE I used two 500g blocks of organic firm tofu in this video. However, you can make as much or as little as you like. I've done batches of one block to four blocks. It literally doesn't matter.
Just keep in mind that you'll want to use up leftovers within 5 days. Or you can freeze them. But keep in mind that frozen tofu will thaw with a different texture. You might like it that way!

COVER THE POT I find my induction stove top a bit finicky so I propped open the lid during the video shoot. However, if you know your stove well and your pot lid has a vent, you shouldn't need to prop it open. Just adjust the heat so that it continues to simmer without boiling over.

ALSO... What are these tofu coagulants made of? How do the acids work versus mineral salts? Do they make different textures? Does the coagulant choice affect the size of the curds? How do they taste?
THE TOFU COAGULANTS USED TODAY *Gypsum* - aka calcium sulfate, a tasteless naturally occurring mineral salt traditionally used in tofu-making, especially Chinese tofu. *Nigari* - the name for this mineral salt comes from the word for “bitter” in Japanese. Nigari is the liquid leftover after concentrating seawater and removing the sea salt (sodium chloride) from it. This leftover brine is mainly magnesium sulfate and can be sold as a liquid or flakes/powder. *Lemon Juice* - with a pH between 2.4 and 2.6, I use bottled lemon juice to avoid natural variations in fresh lemons. *Apple Cider Vinegar* - with pH 2.4, this acid has a fermented apple flavor. It’s really common in the vegan / health and wellness sphere which is why it’s our first vinegar to test. *White Vinegar* - same 2.4 pH as ACV, this acid is in every grocery store and usually very cheap. Of course we have to try it out too! *Epsom Salt* - aka magnesium sulfate, can be found at pharmacies. However, you don’t want to be using regular bath salts (they are “for external use only”). It comes in crystals and should act the same as nigari…but will it?
TRADITIONAL TOFU-MAKING PROCESS This is Chinese-style traditional tofu wherein soy milk is coagulated and the soy curds are pressed into a block to make high protein, bouncy tofu. In this test of tofu coagulants, I will 1. make the *soymilk* exactly the same way, 2. *stir* in the coagulants the same way and at the same temperatures, and 3. use the same model of tofu *press* to form the blocks. All of the conditions and timings will be made as exact as possible in a home kitchen (and within a real-life!)
All of the non-gmo, Canada-grown soybeans were bought at the same time and from the same brand.
Since I have only two of my favorite identical tofu presses, I conducted the same process 3 times in succession: 1. Cold soak 500g dried soybeans (for 250g of beans per tofu block) overnight in the fridge (about 12-14 hours). Then drain and pick out any bad beans. 2. Divide the drained beans into two equal portions. Then blend each portion with 1180 ml water on the highest speed in Vitamix E10 for 25 seconds. Put the puree through a nut milk bag and strain as much as possible. 3. Combine the milk from both portions, skim off foam, then cook milk while stirring continuously. It’s heated to a boil, heat is a adjusted for a gentle simmer; 10 minutes to cook through. 4. Cooked milk is measured, then divided into two equal portions. Each portion is heated to 180°F and coagulant mixture is stirred in. The heat is turned off and soymilk is covered with a lid to rest on the warm stovetop for 15 minutes. 5. The curds are transferred to the prepared tofu press, wrapped in cloth, and a pressing lid is added. Excess whey is poured off, then the whole tofu press is refrigerated until the next morning (about 20 hours). Lastly, the tofu is revealed! We look at the outside texture, cut inside, texture when broken by hand, and taste.
OTHER COAGULANTS NOT USED *GDL - glucono delta lactone* - is commonly used by commercial tofu manufacturers in conjunction with calcium sulfate or magnesium chloride. Unfortunately, I could not get it in time for this video. Plus it’s kind of expensive. *Lime juice* - reported by commenters to work. But it’s similar enough to lemons so I believed the test would be redundant. *Other mineral salts and acids* available at grocery stores- would be interesting to test and taste the differences. So many ingredients, so little time!
RESULTS Were you surprised by the results? I have made tofu with all of these coagulants before but with slightly different processes or conditions. Making them side-by-side, one after the other, was another experience all together.

*What exactly IS Medium Firm Tofu?* Medium Firm Tofu is about as firm (or tender) as the meaty part of your palm just under your thumb. Use a finger to press on that part of your hand and notice how it has some give but is also somewhat firm at the same time. That’s about the firmness that Medium Firm Tofu will have.
Keep in mind, there is no international naming convention for tofu so you might have soft/medium/firm/extra firm here in Canada, or just Soft and Firm in some parts of the USA, or (as a commenter shared, Slightly Firm, Perfectly Firm, Classic, and Hard in Australia).
*TOFU BRANDS THAT GO FLAKY (tested by yours truly)* Superior Tofu medium firm or traditional T&T brand medium firm Sunrise Tofu medium firm (NOTE that during 2020, I started getting mixed results from this one)
Note that Soft tofu was also tested and did create layers. However, after pressing, these layers squished together creating a mushy eating experience.
*OTHER VIEWER TESTED BRANDS* House brand SOMETIMES WORKS with medium firm. I've seen photos from readers who have tried with this brand and it works only sometimes. IE, sometimes it comes out spongy but other times it comes out flaky. You can also try soft; some people have reported that House Brand in SOFT works. Sprouts Brand DOES NOT WORK with medium. You might have success with SOFT. Good news, AUSTRALIA!! Fortune in Smooth Silken Pressed Tofu goes flaky! Verified by viewer photos. Trader Joe's Organic Tofu (magenta label) WORKS! It does not have an additional "firmness" indicated on the label (so not the firm/extra firm).
*ALL I GET ARE SPONGY RESULTS 😭* Please don't be discouraged. You can still use this recipe but ONLY freeze and thaw once. Tofu which freezes into a spongy texture is actually stronger and withstands pressing better. Your vegan fried chicken is going to taste absolutely wonderful. It's just not going to have the same visual effect.

This plant-based burger is different from other seitan burgers because it's packed with juicy savory flavour. It's almost more of a steak than burger tbh. Two special ingredients make this vegan burger a cut above. Tomatoes are naturally high in glutamates which enhance flavour so it's perfect for this grillable vegan burger recipe. Is it the best vegan burger ever? I think so. It doesn't taste like meat; it tastes like savory aromatic mushroomy goodness! Try it and let me know your opinion!
You can make them big and thick for a pub-style burger. Or make them thinner and smaller so you can stack them in fast food-style burgers. The burger patties are meant to be juicy canvases for your burger cravings. So add your favourite sauces or burger seasonings and fillings.

But if you don't want to watch that whole thing and are going to ignore my warning, the recipe is: 200g pumpkin seeds, soaked overnight, and then blended and milked (use a nut milk bag, save the pulp for making crackers), then cook it in a pan until the water evaporates and the curds and nice and fluffy. Season as you like. Don't forget the black salt for an eggy flavor. And only eat the whole thing if you want to be full forever.

This Vegan Keto Sandwich Loaf recipe bakes up like traditional bread and tastes like it too! It has a wonderful toasty aroma, soft and fluffy interior with a thin chewy crust. As a bonus, it’s high in protein and fiber with next to no net carbs. In this video, I will show how to make the keto bread loaf itself, get into details about the ingredients and why each one is used, plus explain the nutrition information with exact numbers.
But WHY vegan keto sandwich bread at all? I have to stay keto in order to keep my chronic tendonitis symptoms away completely. But I still want to have legit sandwiches sometimes! So a low carb bread recipe helps. And if you have your own reasons for keeping it low carb, then I'm happy to help.
By the way, my inspiration for this recipe were the keto buns from my local Save-On-Foods bakery! They are great but expensive so I took the ingredient list, kept the stuff I could buy easily and skipped the ingredients that I couldn't. Then it was months of adjusting ratios and the baking method until I came out with buns that were even more delicious than the original! And now we have a loaf version as well.
IMPORTANT INGREDIENT NOTE: that I particularly like the Anthony's brand of Vital Wheat Gluten. I find it has less of the gluten-y aroma compared to Bob's Red Mill. Also, Anthony's Oat Fiber has zero net carbs but other brands may have more. Please keep this in mind when sourcing ingredients.
MORE EXPENSIVE? Some people have inquired to the cost and based on the cost of ingredients for me, each batch totals $5.66 (Canadian dollars), working out to 71 cents per two slices. For me, this is about the same or a little more than the cost of good quality regular store-bought bread but significantly less than buying store-bought KETO bread.
IS IT REALLY KETO? There's a lot of misinformation about what keto is or isn't. Here's a simple explanation.
The keto diet helps the body get into ketosis (the state in which the body primarily is burning fat for fuel) and stay in that state with the minimization of net carbs. This bread can easily be a part of a balanced keto diet with its super low carb count.
Recently, I checked the effect of one serving of this bread on my blood glucose with a CGM. It did not raise my blood sugar at all. The line stayed flat as if I was still in a fasted state.
I think the confusion is when some "gurus" on YouTube claim that their grain-free/lectin-free/legume-free/plant-free way is the only way to do keto right. Only YOU can tell what helps put your body in ketosis in a healthy way. NOT these strangers.
*ingredient measurements (final version, not the monster)* WET 7g instant or traditional dry active yeast (2 1/4 tsp) 7g maple syrup or sugar (1 tsp) 350ml warm water @ 110°F (1 ½ cup) DRY 125g Ground Golden flax meal (1 cup + 2 tbsp) 175g Vital Wheat Gluten (1 cup + 3 tbsp + 1 ½ tsp) 100g Oat Fiber (8 tbsp + 1 ½ tsp PACKED) 7g salt (1 tsp)
If you want the monster, multiply the ingredients by 1.5 lol
NOTE Please measure by weight for best results. I give the volume measurements only as a last resort but it's really easy to get the ratios wrong if you measure by cups/spoons.

Today's Will It Tofu is a two-in-one. Starting with one of the most requested ingredients. To be completely honest, I've held back on this one simply because hemp hearts are expensive! I regularly see it for $16 per pound and that's just too rich my wallet. But then I found it at Bulk Barn for a bit less...and I caved.
This highly expensive ingredient also known as shelled hemp seeds, are famous for being high in omega-3 fatty acids and marketed as a good source of plant-based protein. I had confidence in this one working out because there IS commercially available hemp seed tofu on the market already (also known as hempfu). But would it work out at home? You'll find out.
Plus we also find out making homemade hempfu is WORTH IT.
The second ingredient today is Roasted Peanuts. We've already tried raw peanuts (youtu.be/HTz0ozatwGk) with nice results. But I had my doubts about a roasted version. Still, it would be amazing if roasted peanut tofu could be a thing. They are quite affordable and accessible!

If you didn't guess from the title, it's mushroom powder. But not just from any mushroom; oyster mushrooms! When oyster mushrooms are dried, their savory flavor is concentrated and enhanced. It's not the same as just cooking down mushrooms. Oyster mushroom powder becomes its own thing. It's like a natural form of MSG or Accent, but with a greater depth of flavour. You don't need a lot to add a lot of depth! However, it's salt-free so if you aren't living a salt-free lifestyle (like most of us) make sure you pair your mushroom powder with a bit as well. In case you were wondering, I used a half pound of fresh oyster mushrooms. After drying and blending them into powder, they became a packed 1/3 cup (28 grams) of homemade oyster mushroom powder. ⚠IMPORTANT⚠ There is some risk when eating RAW Oyster Mushrooms. I dehydrated mine at a very low temperature and use it in my cooking. If you are adding it to foods which will not be cooked further (like cold salads or popped popcorn), please dehydrate them at a minimum of 165°F to be on the safe side. Have you tried it yet?
