Nam prik pao, Thai chili paste, a magical ingredient that makes everything taste better. (Not to be confused with curry paste). You can buy or make it (DIY recipe on my website and in my book Sabai). Putting it in fried rice is one of my favourite ways to use it because it makes a unique tasting fried rice.
