One Pot Pasta Recipe
Serves 4-6
Ingredients
1 tablespoon extra-virgin olive oil, plus more for serving
½ lb andouille pork sausage, sliced (don’t substitute with chicken sausage)
1 small yellow onion, chopped
1 clove garlic, minced
1 bunch spinach, washed
14oz small cherry or grape tomatoes
12 ounces pasta (I like bowties)
4 cups chicken stock
salt
Directions:
Heat the olive oil in a nonstick skillet set over medium heat and add the sliced andouille sausage. Cook for about 5 minutes until brown.
Add the onion and garlic, season with a pinch of salt, and cook for 4-5 minutes until softened.
Add the spinach, tomatoes, pasta, and chicken stock, and cook, stirring frequently, at a low boil for about 10 minutes, until the pasta is al dente and the liquid has been absorbed. Serve and enjoy!
