In this video, I'm making a homemade fresh peach syrup and using it to create three delicious drinks: a pre-batched Peach Old Fashioned, a refreshing Peach Iced Tea cocktail, and a Peach Pisco Sour inspired by the Clover Club.

The best part? Two of these recipes are easily scalable, making them perfect for your next cocktail party or end-of-summer gathering.

Fresh Peach Syrup

Ingredients:

200 g ripe peaches, sliced
200 g sugar

For a little more depth, I like using:

150 g white sugar
50 g demerara sugar

Method:

1. Place the sliced peaches in a sealable glass container.
2. Add the sugar and give everything a good shake.
3. Leave to macerate for 24 hours, shaking occasionally if desired.
4. Strain through a fine-mesh sieve.

This should yield approximately 200–250 ml of fresh peach syrup.

Pre-Batched Peach Old Fashioned

This recipe is designed to be made directly in a bottle and stored in the freezer until you're ready to serve.

For a 700 ml bottle of rye:

600 ml rye whiskey
100 ml fresh peach syrup
10 ml Peychaud bitters

Remove 100 ml of rye from the bottle and replace it with the peach syrup and peach bitters. Give the bottle a good shake and store it in the freezer.

For a 750 ml bottle of rye:

640 ml rye whiskey
110 ml fresh peach syrup
12 ml Peychaud bitters

Remove 110 ml of rye from the bottle and replace it with the peach syrup and peach bitters. Give the bottle a good shake and store it in the freezer.

To serve:
2½ oz / 75 ml pre-batched Peach Old Fashioned
Ice
Peach slices for garnish
Pour the cocktail over ice and stir until properly chilled and diluted. Garnish with fresh peach slices.


Peach Iced Tea Cocktail

A refreshing and easily scalable drink that's perfect for a party. The peach iced tea cordial can also be enjoyed without alcohol.

Peach Iced Tea Cordial:

* 450 ml brewed black tea
* 125 ml fresh peach syrup
* 6 g citric acid
* 3 g malic acid

To make the tea, brew approximately 8 g of black tea in 750 ml of hot water for 5 minutes. Remove the tea leaves or tea bags and allow the tea to cool slightly.

Combine 450 ml of the brewed tea with the peach syrup, citric acid, and malic acid. Stir until the acids are completely dissolved, then bottle and refrigerate.

To make one cocktail:

* 1 oz / 30 ml dry gin
* ½ oz / 15 ml Bénédictine
* Approximately 4 oz / 120 ml Peach Iced Tea Cordial

Build over ice in a Collins glass, stir gently, and garnish with fresh peach slices.

The peach iced tea cordial also works beautifully with tequila, mezcal, whiskey, or other spirits—or simply on its own as a non-alcoholic drink.

Peach Pisco Sour

A fruity riff on the classic Pisco Sour inspired by the Clover Club template.

Ingredients:

* 1½ oz / 45 ml Peruvian pisco
* ½ oz / 15 ml dry vermouth
* ½ oz / 15 ml fresh lemon juice
* ½ oz / 15 ml fresh lime juice
* Âľ oz / 22.5 ml fresh peach syrup
* 1 egg white

Method:

1. Add all ingredients to a shaker.
2. Dry shake without ice to create a rich foam.
3. Add ice and shake again until thoroughly chilled.
4. Fine-strain into a coupe glass.
5. Garnish as desired.

The addition of dry vermouth makes this riff lighter and brighter while allowing the peach and pisco to really shine.
