Capra Demon 2.0, I took out his dogs before the fight though.
He's got a pretty basic moveset, most of his attacks are slow on the wind-up and easy to parry, the only two things you have to watch out for are his fire breath (non-parryable, obviously) and the jump attack he does with only one hand, as it's faster than the two-handed one and requires quicker reaction on the parry. Once you're close to him, it's only a matter of avoiding the flame, as his initial swings from short distance are all really slow.

This is a pretty fun boss fight to do this way, but boy can it take a long time if youre not aggressive enough. Also Im not sure how the hell the ring of fire at 0:54 didnt kill me, I wasnt especially familiar with this boss before and was sure that if you get caught in it you get hit 100% of the time, but maybe I just happened to be in a sweet spot or something.
