We have missed everyone, thanks for all the comments asking if we were ok. We have been super busy with the kids and haven’t had time to record. We took a break from YouTube and low carb during the holidays. We started back recently and decided to have a cheat day. What’s better than homemade buns for a cheat meal? Well that and beer for Loyd. I wasn’t planning on posting a video, Loyd bought a new Oklahoma Joe Bronco and this was his first time using it. Next time I will record the whole set up. We just followed the instructions that came with the smoker. We didn’t do a taste test since we got a late start, everyone was hungry. I listed below all the ingredients and instructions.
Buns
Ingredients
1 Cup Water
2 Eggs
1/3 Cup Oil
1/4 Cup Sugar
1 Teaspoon Salt
4 Cups Bread Flour
1 1/2 Teaspoons Bread Machine Yeast
Egg Wash
1 Egg
1 Tablespoon Water
Place wet ingredients in bread machine pan, follow the owner’s manual for your machine. Set it to the quick dough setting. Remove, cut into pieces. Lightly spray gloved hands with cooking oil, prevents you from needing extra flour. Shape to desired size, cover with plastic wrap that's been sprayed lightly with cooking oil. Let rise 30 minutes or until they double in size. Apply egg wash, and bake for 14 minutes at 350 degrees. After slicing the buns, I lightly buttered the inside, and toasted the buns in my grill pan.
Pork
Score and season with Red Salt (Hawaiian)
Let sit overnight wrapped
Smoked 5 hours uncovered
Smoked 4 hours in a foil pan with onions and vinegar covered in foil
BBQ Sauce
4 Cups Of Ketchup
2/3 Cup Of Cider Vinegar
2/3 Cup Of Worcestershire Sauce
1/3 Cup Of Yellow Mustard
1/3 Cup Of Brown Sugar
3 Cloves Of Garlic
1 Teaspoon Of Liquid Smoke
(Eyeball The Rest)
Honey
Hot Sauce
Salt
Pepper
Applewood Rub
Old Bay Seasoning
Ground Mustard
Onion Powder
Garlic Powder
Celery Seed
Paprika
Cook on stovetop until thickens
