A restaurant in Queens built an entire lasagna out of nothing but the crispy edge, and it is the best thing I have ever eaten.
When you say lasagna is your favorite, you are not being completely honest. You do not mean the whole thing. You mean the corner. The crispy edge. That is the part you actually want. Rollo's in Queens figured that out and built their entire lasagna around it. Two fresh sheets of spinach pasta dough, bolognese, bechamel, Parmigiano-Reggiano, and two minutes in a wood-fired oven at 750 degrees. That is it. No heavy layered baking dish. No soggy middle. Just crispy, blistered pasta with everything you love about a traditional Bolognese lasagna in every single bite.
In this video I am recreating it from scratch. Fresh lasagna verde dough, a slow cooked meatball mix bolognese with a touch of red wine vinegar, a classic nutmeg bechamel, and the wood-fired finish that makes the whole thing work.
This is the Rollo's two-sheet lasagna, made at home.
