Brazil are out. Norway are making history. 🇳🇴⚽️
Today I’m making Fårikål (FOR-ee-kohl) – Norway’s national dish. Just lamb, cabbage, pepper and time. A simple meal that perfectly represents a nation that’s beaten Brazil again and booked its place in the World Cup quarter-finals.
Recipe (Serves 4):
🐑 1.5kg bone-in lamb shoulder/neck
🥬 2 small cabbages, cut into wedges
🥔 1kg potatoes
🧂 2 tsp salt
⚫ 3 tsp whole black peppercorns
🌾 2 tbsp plain flour (optional, for a slightly thicker broth)
💧 750ml water
Layer the lamb and cabbage in a heavy pot, seasoning each layer with salt, pepper and a little flour. Pour over the water, bring to a gentle simmer, cover and cook for 2½–3 hours until the lamb is falling off the bone. Boil the potatoes separately for 20–25 minutes and serve with plenty of the rich peppery broth.
