🇸🇳 SENEGAL | THIÉBOUDIENNE 🐟🍚⚽
Many believe this iconic Senegalese dish helped inspire what we now know as Jollof rice across West Africa… but please keep me out of the Jollof wars 😅 I just sharing the research I found haha ❤️
In 2002 Senegal shocked the world by beating the reigning champions France. Now they’re back on football’s biggest stage and I’m celebrating with their national dish: Thiéboudienne (Ceebu Jën), which literally means “rice and fish.”
🔥 RECIPE
• 2 Whole Fish (Sea Bream)
• 1 tube tomato paste
• 2 fresh tomatoes, blended
• 1 onion, diced
• 3 garlic cloves
• 1 Scotch bonnet chilli
• 300g broken jasmine rice
• 1 carrot
• 1 sweet potato
• 1 cassava or parsnip
• 1 small cabbage
• 375ml fish stock
• 1 tsp curry powder (optional)
• Salt & black pepper
• Vegetable oil
1️⃣ Season and fry the fish until golden. Remove and set aside.
2️⃣ Fry the tomato paste until it darkens and caramelises. Add onion, garlic, fresh tomatoes and chilli. Cook for 5 minutes.
3️⃣ Add stock along with blended tomatoes peppers, chilli and onion and vegetables. Simmer until tender.
4️⃣ Remove vegetables. Add rice to the stock and cook until it absorbs all that flavour.
5️⃣ Return the fish and vegetables to the pot.
6️⃣ Serve and enjoy.
