By using a unique "triple-dip" coating technique and a fresh, homemade protein base, we can create thin-skinned, succulent dumplings that honestly rival the traditional version.

Ingredients
For the Fresh Base:
4 cups Whole milk
2 tbsp Vinegar (mixed with 4 tbsp water)
Cold water (for rinsing)
For the Savory Filling:
1 tbsp Cooking oil
1 tbsp Ghee
½ cup Onion, finely chopped
1 tsp Garlic, finely chopped
1 tsp Ginger, finely chopped
1 Green chili, chopped
1 Carrot, finely chopped
3 cups Cabbage, finely chopped
1 Green onion, chopped
Spices: Pinch of salt (for onions), 1 tsp salt (for veggies), ¼ tsp chili flakes, ¼ tsp roasted cumin, ¼ tsp turmeric, pinch of black pepper.
The Binder: 1 tbsp Cornstarch mixed with ¼ cup water (slurry).
For the "No-Wrapper" Coating:
1 cup All-purpose flour (Maida)
1 bowl Plain water
Instructions
1. Prepare the Fresh Cheese Base
In a large pan, bring the 4 cups of whole milk to a gentle simmer. Once it reaches a simmer, turn off the heat immediately. Slowly pour in your vinegar and water mixture. Stir gently until the milk curdles completely. Strain the curds through a colander. Rinse the cheese with cold water to remove the vinegar scent, then use a spatula to squeeze out as much moisture as possible. Set this aside.
2. Sauté the Veggie Filling
Heat the oil and ghee in a non-stick pan. Add the onions and a pinch of salt, sautéing until tender. Stir in the garlic, ginger, and green chili for about 30 seconds until fragrant.
Add the chili flakes and roasted cumin, followed by the carrots, cabbage, and green onion. Season with 1 tsp salt and cook until the vegetables are tender. Finish by sprinkling in the turmeric and black pepper.
3. Incorporate and Bind
Add your reserved cheese to the pan. Mix vigorously, breaking down any large lumps until the cheese is seamlessly integrated with the vegetables. Pour in the cornstarch slurry.
Pro Tip: This step is vital! The filling must become sticky and cohesive so the balls hold their shape during the coating process.
4. The "Triple-Dip" Coating Technique
Once the filling has cooled slightly, roll them into bite-sized balls.
First Coat: Toss 3–4 balls into the all-purpose flour until fully covered.
The Dip: Using a skimmer spoon (spider strainer), carefully dip the floured balls into the plain water.
Repeat: Immediately return them to the flour, then back to the water, and finally into the flour one last time (3 coats total). This creates a thin, translucent "skin" without any rolling pins!
5. The Quick Boil
Carefully drop the coated balls into a pot of boiling water. Let them cook for 4 minutes. You will see the coating transform into a silky, dumpling-like texture.
Remove them gently, serve hot with your favorite spicy chutney, and enjoy!
