The Fales Library, unlike its host, New York University, remains largely unknown to outsiders; yet its fame in gastronomic circles is legion.
Housing upwards of 55,000 cookbooks, each of them hand-picked, this astonishing resource is a culinary Mecca, attracting aficionados from all walks of life to its celebrated collection - by far the most comprehensive on the continent.
In a rare departure for the library, 101 Classic Cookbooks, representing the creme de la creme of 20th-century cuisine, have been assiduously selected from its holdings, from which 500 definitive recipes have, in turn, been drawn.
The result is salutary. Carefully curated by the likes of Alice Waters, Marion Nestle and the Fales' own, enlightened director, Marvin Taylor, this colourful anthology is not merely unique, but evocative. Laid out by subject, rather than title, and with original artwork intact, it is also eminently practical; and the recipes remain unchanged.
All the big names are here, not least Elizabeth David, whose recipe for that trickiest of recipes, bouillabaisse (significantly included), took the fear out of French cooking for this correspondent, at least.
A rich resource for those so inclined, and warmly recommended.
