Today I’m sharing one of my favorite childhood breakfasts — soft and fluffy Ukrainian kefir pancakes, called oladky.
They’re quick, simple, and made from basic ingredients: kefir, egg, flour, and baking soda. You can keep them plain, or add a thin slice of apple inside — just like my mom used to do.
📋 Ingredients
300 g warm kefir (room temperature)
1 room-temperature egg
½ tbsp sugar
A pinch of salt
210–220 g flour
½ tsp baking soda
