One pot NO Chop Sausage and kale gnocchi by Sweet Savant RECIPE
1 pound Italian sausage
8 ounces of cherry tomatoes
16 to 24 ounce package of gnocchi from the refrigerated section
3 ounces of Boursin cheese
1 cup of chicken broth
3/4 cup heavy cream
4 ounces of sundried tomatoes
10 ounces of baby kale OR baby spinach
1/2 cup of shredded mozzarella cheese or "Italian " cheese blend
1/4 cup of Grated Parmesan cheese
Brown the sausage over medium heat for about 5 minutes (you probably won't need to add oil)
Add the tomatoes and the gnocchi and cook for another 5 minutes (until the gnocchi is a little brown)
Add the Boursin cheese, chicken broth, sundried tomatoes, and heavy cream. Smash the Boursin into the sauce and let it thicken over medium heat for about 5 minutes.
Stir in baby kale and let it wilt for 2-3 minutes top with shredded mozzarella and broil for about 2 minutes.
Serve topped with grated Parmesan
