Got a produce drawer full of vegetables that need to be used? Turn them into an easy sautéed vegetable mix you can keep in the refrigerator and use in meals throughout the week!
In this video, I’m cleaning out my produce drawer and using what I already have on hand: onions, celery, carrots, red, green and yellow bell peppers, plus garlic. This isn’t a strict recipe—it’s a simple method you can customize with whatever vegetables need using up in your kitchen.
I cook the vegetables just until tender so they’re ready to add to other recipes without becoming overcooked. Use them in eggs, frittatas, omelets, pasta, rice, soups, casseroles, quesadillas, potatoes and so much more.
This is one of those simple meal-prep habits that can save time, save money and help reduce food waste.
What I used today:
Onion
Celery
Carrots
Red bell pepper
Green bell pepper
Yellow bell pepper
Jarred minced garlic
Oil
Salt
Black pepper
The amounts are completely flexible—use what you have!
Store the cooled vegetables in a covered container in the refrigerator and use within about 3–4 days.
