Paul Folger recently traveled to Dallas and stumbled upon a bagel shop that left a lasting impression. The memorable visit sparked a delicious idea — why not bring the fun home and set up your own bagel bar for Monday night dinner? Paul joined us to show how putting everyone in charge of their own creations makes for a creative and satisfying meal.

Paul’s Bagel Bar
PREP TIME: 10 min | COOK TIME: 15 min | SERVES: 4–6
Ingredients:
• Thick bagels, store-bought
• Rosemary ham (from Trader Joe’s)
• Swiss cheese
• Mayo
• Spicy mustard
• Lettuce and tomato
• Scrambled eggs
• Bacon or sausage
• Avocado
• Cheddar cheese
• Hash browns (from Trader Joe’s)
Directions:
1. Scoop out some of the bread from the inside of each bagel to make room for toppings.
2. Toast the bagels until golden.
3. Set out all toppings and let everyone build their own bagel.
Advice:
• Set up two topping stations — one for a classic deli-style bagel with rosemary ham, Swiss, mayo, spicy mustard, lettuce and tomato, and one for a breakfast bagel with scrambled eggs, bacon or sausage, avocado, cheddar and hash browns.
• Scooping out the bagel keeps it from getting too bready and helps hold all the toppings.
