Shakshuka is a great healthy meal, but doing it in the oven can take the best part of an hour.
In our #MicrowaveMeals series, we do a chickpea shakshuka in ten minutes flat. You can add cheese and greens to it easily too.
Recipe
- Grease a microwavable shallow bowl
- Pour a quarter of a cup of tomato sauce into the greased bowl
- Add a quarter of a cup of chickpeas
- Add a dash of chilli flakes and a pinch of salt (to taste)
- Mix together
- Create a dome of the mixture, and make a well in the middle of it
- Break the egg into the well
- Gently pierce the yolk of the egg
- Cover with a damp piece of kitchen towel
- Cook on 80% power for around 60 seconds
- Use 20 second bursts to cook until the egg white is set.
- Sprinkle some feta cheese in top if desired
