🇲🇽 MEXICO – MOLE POBLANO
Mexico put chocolate in a chicken sauce… and somehow it became one of the most famous dishes in the world.
For the first episode of RiskyRoadz to the World Cup, I headed to Mexico 🇲🇽
To make Mole Poblano! One of Mexicos most Iconic dishes!
Dried chillies, nuts, seeds, fruit and chocolate all treated separately before being brought together into one incredible sauce.

INGREDIENTS
• 4 Ancho chillies
• 4 Pasilla chillies & 2 Mulato Chillis if you can find them.
• 2 tomatoes
• 1 onion
• 4 cloves garlic
• 1 ripe plantain
• 75g sesame seeds
• 50g almonds
• 50g peanuts
• 50g pumpkin seeds
• 50g raisins
• 2 corn tortillas
• 2 slices stale bread
• 50g dark chocolate (70–75%)
• 750ml chicken stock
• Salt to taste
FOR THE CHICKEN -
• 1 whole chicken
• Salt
For your mole poblano, I’d make fresh tortillas:
* 250g Maseca
* 325ml warm water
* ½ tsp salt (optional)
Mix until it feels like plasticine. Not sticky, not dry.
Rest 15–20 minutes.
Roll into 12 balls and press thin (a tortilla press is ideal, but two chopping boards work).
Cook on a dry cast-iron pan or skillet:
1. 30 seconds first side
2. 60 seconds second side
3. 20–30 seconds back on first side
METHOD
1️⃣ Toast the chillies and soak in hot water.
2️⃣ Fry the almonds, peanuts, pumpkin seeds and sesame seeds separately.
3️⃣ Fry the bread and tortillas until golden.
4️⃣ Cook the onion, garlic, tomatoes and sliced plantain until softened.
5️⃣ Blend everything together with the stock until smooth.
6️⃣ Simmer gently for 40–60 minutes.
7️⃣ Add the chocolate and stir until melted.
8️⃣ Season to taste.
9️⃣ Cook your chicken separately and spoon over the Mole.
